The reason behind this menu slant is our Executive Chef’s embrace of the whole ‘Farm to Fork’ concept. The fertile farmlands of the state’s southwest, as well as the vast, pristine fishing waters along the WA coast are the main sources of ingredients that combine freshness with seasonality, resulting in flavoursome combinations that reflect their unspoiled provenance.
Add to that some of Australia’s finest wines, all produced within a few hundred kilometres of Perth, and you are set for an uncommonly delicate but divine dining experience.
The ambience on offer is just as tempting, with the liveliness of an open kitchen complementing the buzz of the lobby location. On a typically sunny day, enjoy relaxed alfresco dining while watching the world pass by on Wellington Street. On occasions, live bands take to the stage at ‘Stage’; even if you’re not hungry, you can always take in a set while enjoying an offering from our international spirit menu.
If you prefer a more intimate dining experience, many of the succulent offerings from the ‘Stage’ menu are also available served a la carté in your room, with full dining seating if requested.

Executive Chef Craig Spence started out flipping burgers in his family’s restaurant. By the age of 15 he had his first professional role. While working in local restaurants on the west coast of Scotland he received classical training and started to progress through the ranks and build his skills. He moved to Edinburgh to take on Sous and Head Chef roles at various prestigious hotels and restaurants.
While based in the UK he worked at St Andrew’s for 5 years including the Old Course Hotel and during the Open Golf Championships. He relished the opportunity to cook for the world’s elite of sport and for celebrities who follow the game. He has also been a member of the team of chefs cooking for the Queen at her annual Edinburgh garden party. In 2016 Craig moved to Perth and took up the role of Executive Chef at Peppers King Square. Craig’s reputation has rapidly grown and he has established the Stage & Bar Restaurant as a flagship venue.
With a passionate approach to menu development that explores diverse and unique local ingredients, Craig has already received a range of five star reviews and has seen Stage Bar & Kitchen been voted as Tapas Bar of the Year in Perth by Australian Good Food Guide members. He was a finalist in Hotel Chef of the Year at the HM Awards 2017.
